Environmentally Friendly & Gorgeous


This past weekend was just too much fun as per usual.   Friday a group of 17 of us headed down to Denver to eat at the Watercourse - a vegetarian restaurant that is YUMMY.  Before y'all meat eaters start making any faces - I'm telling you this is some of the best food I have eaten.  The menu was huge - the portions fantastic - the drinks refreshing - and the desserts delicious.  We all had a wonderful time.  The large group parted ways after dinner - some wanted to go dancing - while others (including myself) wanted to check out the bar scene of Denver.  Needless to say several several bars later - the new roomie Megs and I found ourselves catching the last bus to Boulder at 2:22 AM.  Now that was an experience.

Saturday after being dragged out of bed the four roomies headed to the Soy Compound for some fun in the sun.  Now you might be asking yourselves - Soy Compound?  Well - one of our friends has the hook up and knows the people who created many of the soy foods you see in your grocery store today - and I'm not just talking about the tofu ... soy milk products, etc. Well as you can imagine their home is GORGEOUS and one of the most environmentally friendly places I have been.  It was like a resort...awesome way to spend the day with new friends. 

Walking into the house you cross a bridge and to your right is water fall - plus down below are giant gold fish swimming around.

The swimming pool / lake - it was all natural and had algae that self cleaned the pool.  After getting out your skin felt super soft - it was crazy.  Also - check out the view of the mountains in the back ground - gorgeous!! 


Sunday was filled with another adventure - Megs and I headed to where she grew up - Evergreen, CO.  Beautiful mountain town ... that happens to have a wild WHITE buffalo running around with one of the herds.  According to Native American Indians 2,000 years ago a young woman who first appeared in the shape of a white buffalo gave the Lakota's ancestors a sacred pipe and sacred ceremonies and made them guardians of the Black Hills. Before leaving, she also prophesized that one day she would return to purify the world, bringing back spiritual balance and harmony; the birth of a white buffalo calf would be a sign that her return was at hand. 

Prior to checking out the white buffalo we attempted to drive up Mount Evans... 

Y'all see the snow?! Thats right we got caught in a SNOW STORM in our attempt to drive to the top on the highest auto road 

Not sure if you can tell - but that is snow falling!! 


That's okay - because on Tuesday I went down to Colorado Springs and checked out the US Air force Academy and drove to the top of Pike's Peak (another 14,000 ft mountain).  I'll put up the pictures of that crazy adventure sometime this week.

Eating and What Nots

I had a great weekend filled with laughs and food! It started on Thursday when the Virginian took me out on a date. I had not been out of the house for a social evening in well over a week since Nursing School has taken over my life. I was in much need of getting out of my house and enjoying a tasty beer.



We went to Tobacco Road, a new restaurant that opened up at the beginning of this year. Let me tell y'all why I am in love with this place. One - no smoking allowed - anywhere. Two - delicious beers on tap. Three - YUMMY food. What did I order? The mac and cheese. Now I do not - repeat do not ever - order something like mac and cheese from a restaurant. Just not my thing - BUT - I was told it was super fantastic and oh my goodness my mouth is drooling just thinking about it. I recommend this yummy classic home cookin' dish as a must must try.


Friday I worked all day at the Stationery store - I was only blinded by one woman's gigantic diamond ring. Seriously - I do not even know what it looked like because her whole left side of her body was blocked by the ray's coming off her left hand. I grabbed some sushi from Harris Teeter and headed off to the movies with six girlfriends to see ....





Um - yeah way to sum up my life in an hour twenty mins...after the movie I headed home and curled up in my comfy bed with my dog. Moving on...



Saturday I woke up early to work out with the trainer and head to work for round two. After getting off of work I promptly drove myself to Total Wine where I purchased one giant size bottle of Pinot and a twelve pack of Michelob Light. (The weight conscious beer.) I arrived home to find the roomie in full summer mode (it was 68 degrees on Saturday and 74 on Sunday!) ... she was making hamburgers! It was lovely. I changed into some comfy clothes and uncorked my bottle of wine. Um so side note - I have not really been drinking lately so after two glasses of wine I was drunk. Sweet - its 8:30pm. Needless to say I was unable to make it out like I had planned because one - I could not dress myself and two - no operating a motor vehicle in my condition. We still had a lovely time just hanging out at home.



Sunday I woke up and started cleaning. Washed all my sheets, comforter, vacuumed, etc. Watched Greys and Private Practice ... was a bad child skipped Church and headed too...

Can we say DELICIOUS?! Yes we sure can. This place is fantastic. I did not even eat breakfast food - I opted for the chicken salad which was amazing. It had blue cheese crumbles and came with heavenly rosemary dusted potatoes wedges. (Don't worry I had a biscuit too - super fantastic with apple butter.) Not only is the food great but the atmosphere is wonderful. Following this great meal the roomie and I headed over to look at townhouses that she is thinking about purchasing. Super cute and in a great location...so lets keep our fingers cross! We then picked up Ms Lucy and headed over to a local field to play flag football with our neighbors. Lucy had a ball - she played for both teams. She would even line up with everyone and then take off running when the ball was thrown.

Now I am sitting here trying to get my butt motivated to study for my next exam on Tuesday. I have to complete a full body assessment on my lab partner. Thankfully I love my lab partner and she has great hygiene because I will be getting all up close and personal.

Is it 4:30 yet?

I am counting down the hours today till work is over! Not that this week was so bad ... but lots of fun things going this weekend such as...

  • pedicure after work (im in need real bad)
  • a little shopping adventure (jcrew 30% off - say what?!)
  • on Saturday work out in the AM with the personal trainer
  • party at White Oak featuring the : http://oakcitysmoke.blogspot.com/ Crew cooking some delicious food!
  • Sunday - a day of projects for work and school

Weekend Highlights

Well I think I can finally say that I have come a bit addicted to this blogging world - it is my new facebook. I am suppose to be cleaning my room this morning and well I have cleaned off my entire desk but the piles of clothes can wait.

Friday night the roomie and I went to the YMCA for a little workout action followed by some yummy spaghetti that the bf cooked for us when we got home. We watched some TV and headed off to bed rather early for a Friday night.

Saturday morning we were up bright and early for the RACE FOR THE CURE. It was soo much fun. It was amazing seeing all the people walking or running for breast cancer. It was a very humbling experience to be apart of something that big. There were over 25,000 people there! I must say it was very cool to run down the middle of Hillsbourgh Street, Dixie, etc.

Saturday evening we were invited to Barefoot in the Park s house for a couples evening filled with yummy food and games. It was a great way to spend the evening after an early morning. It was a ton of fun getting to hangout with other couples.

Sunday was cleaning day ... I am trying to get myself ready for school - classes begin Thursday evening. It is going to be an adjustment working all day and class in the evening..thankfully it is only one day a week! Sunday ended with some yummy sushi and relaxation in front of the TV.
